An iconic dish of French cuisine, beef bourguignon is one of those heartwarming recipes that warms the soul. It's a dish you take the time to prepare, perhaps the night before or on a winter Sunday, and it fills the whole house with its aroma. Here, I offer you my classic version, with a red wine marinade, just like our grandmothers used to make.
🛒 Ingredients (for 6 people)
Pour la marinade :
- 1 kg de bœuf à mijoter (paleron, macreuse, gîte…)
- 1 bouteille de bon vin rouge (type Bourgogne)
- 2 carrots
- 1 onion
- 2 gousses d’ail
- 1 branche de céleri (facultatif)
- 1 bouquet garni (thym, laurier, persil)
- A few grains of black pepper
- 2 cloves
- For cooking:
- 2 c. à soupe d’huile neutre
- 50g of butter
- 2 tablespoons of flour
- 150g of smoked bacon
- 200 g de champignons de Paris
- 12 petits oignons grelots
- Sel, poivre
- Tip: a long marinade will result in more tender and flavorful meat.
🍳 D-Day: Cooking the dish
- Drain the meat and pat it dry with paper towels. Strain the marinade, separating the wine from the vegetables.
- Next, add the vegetables from the marinade, then pour in the strained red wine. Season with salt and pepper, and add a fresh bouquet garni if possible.
- Cover and simmer over low heat for about 3 hours, stirring occasionally. If using a pressure cooker, allow 1 hour 30 minutes.
🍄 Pendant ce temps : les garnitures
- Fry the bacon in a dry pan. Set aside.
- Next, brown the pearl onions and sliced mushrooms in a little butter.
- Add everything to the casserole dish about 30 minutes before the end of cooking.
🍷 À table !
Serve your beef bourguignon piping hot, accompanied by steamed potatoes, fresh tagliatelle, or a good homemade mashed potato. And above all, know that it's even better the next day: don't hesitate to prepare it in advance!
