- 4 eggs (whites and yolks separated)
- 1 pinch of nutmeg
- Salt and pepper
🥘 Type of dish to use
👉 A ceramic or porcelain soufflé dish (diameter 18–20 cm)
These dishes rise well, distribute heat evenly and ensure a beautiful rise of the soufflé.
👨🍳 Preparation
1. Prepare the base
- Preheat the oven to 190°C.
- Melt the butter in a saucepan, add the flour and mix to form a roux.
- Gradually pour in the milk while whisking until you obtain a thick béchamel sauce.
- Remove from heat and add the egg yolksAdd the grated cheese, nutmeg, salt and pepper. Mix well.
2. Whisk the egg whites until stiff peaks form
- Assemble the egg whites very firm.
- Gently incorporate them into the previous mixture, lifting the mass so as not to break them.
3. Cooking
- Generously butter the soufflé dish.
- Pour the mixture until it reaches 3/4 of the way up the dish.
- Bake for 25 to 30 minutes, without ever opening the oven door.
- Serve immediately: the soufflé will collapse quickly!
For a spectacular climb, spend a buttered finger inside the mold by drawing a circle at the very top of the wall: the soufflé will rise perfectly straight to the center.
